    トマトの加工品(調味料)

    トマト調味料の代表格トマトケチャップは、加工用トマトを裏ごしして濃縮したものに食塩、香辛料、糖類、食酢、玉ねぎ、ニンニクなどを加えて調味したもので、トマトの可溶性固形分が25%以上あります。トマトジュースの約3倍にも濃縮されていますから、栄養的にかなり優れた調味料と言えるでしょう。
    トマトソースは、加工用トマトを裏ごしして濃縮したものに食塩やスパイスを加えたもので、可溶性固形分が9~25%のものを言います。ケチャップより薄めに味付けされているので、パスタソースのベースなどに広く使われます。
    ピリ辛風味のチリソースは、粗く砕いた加工用トマトをそのまま濃縮し、玉ねぎや唐辛子などを加えて調理したもの。旨味と辛さで料理の味を引き締めます。
