    トマトの加工品(調理素材-1)

    トマトにはビタミンAはありません。βカロテンが体内でビタミンAに変わります。調理素材としてのトマト加工品は味付けが薄くされているので、肉や魚、野菜、パスタなどと合わせて様々な料理に使えます。
    トマトピューレーは、加工用トマトを裏ごしして濃縮したものに少量の食塩を加えただけなので、トマト本来の風味がそのまま残っています。そのトマトピューレーを更に濃縮したものが、トマトペースト。水分が少ないので、濃厚なソースを作りたいときにも長時間煮詰める必要がなく、料理の色が鮮やかに仕上がるのが利点です。トマトジュースに比べてビタミンCは約3倍、食物繊維は約7倍も含んでいます。
